Ingredients

  • 4 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 pound carrots, cut in 1-inch pieces
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup raisins
  • 3/4 cup nuts (optional)

Instructions

  1. Mix dry ingredients (flour, baking powder, baking soda, cinnamon) together; set aside.
  2. In a processor, beat eggs on slow speed.
  3. Add oil, sugar, carrots, raisins, and nuts in that order, then incorporate the dry ingredients.
  4. Pour batter into a greased and floured 9 x 12-inch or Bundt pan.
  5. Bake at 325°F (160°C) until done, approximately 55 minutes in a Bundt pan or less in a 9 x 12-inch pan.
  6. Allow cake to cool before frosting.
