Ingredients

  • 1 deep 9-inch baked pie shell
  • 1 1/4 cups sugar
  • 6 tablespoons cornstarch
  • 2 cups water
  • 1/2 cup fresh lemon juice
  • 3 eggs
  • 3 tablespoons butter
  • 1 1/2 teaspoons lemon extract
  • 2 teaspoons vinegar

Instructions

  1. Mix sugar and cornstarch together in the top of a double boiler. Add water and cook over boiling water for 25 minutes or until thick.
  2. Combine egg yolks with lemon juice and beat well.
  3. Add the egg yolk mixture to the sugar mixture and cook over boiling water for 25 minutes or until thick.
  4. Remove from heat and add lemon extract, butter, and vinegar. Stir thoroughly.
  5. Pour the filling into the baked pie shell and let it cool.
  6. Cover the pie with meringue and brown in the oven until golden.
