Ingredients

  • 4 large white potatoes
  • onion salt
  • salt
  • pepper
  • grated Parmesan or Romano cheese
  • butter
  • 1 pint coffee cream

Instructions

  1. Boil the potatoes with skins on for approximately 25 minutes, then cool and refrigerate overnight.
  2. Butter a casserole dish.
  3. Scrape off the skins from the potatoes and grate them on a medium food grater.
  4. Layer in the casserole: grated potatoes, onion salt, salt, pepper, grated cheese, and dot with butter.
  5. Repeat the layering for a second layer.
  6. Pour the coffee cream over the top, sprinkle with grated cheese and paprika.
  7. Cover and bake uncovered at 350°F (175°C) for 1 hour.
