Ingredients

  • 1/2 lb. butter
  • 1 cup butter
  • 5 large eggs
  • 1 lb. candied pineapple or fruit mix
  • 3/4 lb. candied cherries
  • 4 cups chopped pecans
  • 1/2 oz. pure vanilla
  • 1 cup sugar
  • 1 3/4 cups flour
  • 1/2 teaspoon baking powder

Instructions

  1. Cream butter and sugar until fluffy.
  2. Blend in eggs, one at a time.
  3. Mix part of flour into fruits and nuts.
  4. Sift remaining flour with baking powder.
  5. Fold into egg and butter mixture.
  6. Add vanilla and lemon extracts.
  7. Mix well and fold in fruit and nuts.
  8. Pour into greased paper-lined tube pan or small loaf pans.
  9. Place in cold oven and turn oven on to 250°F.
  10. Bake for 3 hours.
  11. Cool in pans.
  12. Keep well wrapped (foil is okay) and in a canister for at least 2 months.
