Bev'S Lemon Bars

- Preheat oven to 350°F (175°C).
- Mix flour, softened margarine or butter, and powdered sugar in a small bowl.
- Press the mixture evenly into the bottom and about 3/8 inch up the sides of an ungreased 8x8-inch square pan.
- If the dough is sticky, flour your fingers to press it in.
- Bake the crust for 20 minutes.
- In a medium bowl, beat together granulated sugar, lemon juice, grated lemon peel (if using), salt, and eggs on medium speed until light and fluffy.
- Pour the lemon mixture over the hot crust.
- Bake until no indentation remains when lightly touched in the center, about 25 minutes.
- Let the bars stand until cooled.
- Cut into 1 1/2-inch squares and serve.
