Ingredients

  • 1 cup flour
  • 1/2 cup margarine or butter, softened
  • 1/4 cup powdered sugar
  • 1 cup granulated sugar
  • 2 teaspoons grated lemon peel (optional)
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 2 eggs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, softened margarine or butter, and powdered sugar in a small bowl.
  3. Press the mixture evenly into the bottom and about 3/8 inch up the sides of an ungreased 8x8-inch square pan.
  4. If the dough is sticky, flour your fingers to press it in.
  5. Bake the crust for 20 minutes.
  6. In a medium bowl, beat together granulated sugar, lemon juice, grated lemon peel (if using), salt, and eggs on medium speed until light and fluffy.
  7. Pour the lemon mixture over the hot crust.
  8. Bake until no indentation remains when lightly touched in the center, about 25 minutes.
  9. Let the bars stand until cooled.
  10. Cut into 1 1/2-inch squares and serve.
