Ingredients

  • 2 medium eggplants
  • 1/2 cup vegetable oil
  • 6 cloves garlic
  • 1 small onion
  • 4 tomatoes
  • 4 green peppers
  • 1 teaspoon red pepper
  • 1/5 teaspoon turmeric powder
  • 1 teaspoon cumin
  • salt to taste

Instructions

  1. Fry the chopped onion in vegetable oil until translucent.
  2. Add salt, red pepper, turmeric powder, and cumin; stir well.
  3. Add the chopped eggplants, tomatoes, and garlic; stir to combine.
  4. Cook on low fire until the eggplants are tender, then add the green pepper.
  5. Cover and cook for an additional 5 minutes.
