Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/3 cup milk
  • 2 cups fresh blueberries
  • extra sugar (for tops)

Instructions

  1. Heat oven to 450°F.
  2. Grease the cups of a muffin tin (12-cup or 8-cup).
  3. Combine flour, baking powder, and salt in a bowl and set aside.
  4. In a large bowl, with a mixer at medium speed, beat softened butter and sugar until well blended.
  5. Add eggs and beat until smooth.
  6. Add flour mixture and milk, beating until well blended.
  7. Stir in blueberries.
  8. Spoon batter into prepared muffin cups.
  9. Sprinkle tops with extra sugar.
  10. Bake for 5 minutes at 450°F.
  11. Reduce oven temperature to 375°F and bake for an additional 30 to 35 minutes.
