Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 1/2 cups oil
  • 2 large bananas
  • 1 small can crushed pineapple
  • 1 1/2 teaspoons vanilla

Instructions

  1. Sift together the flour, sugar, baking soda, salt, and cinnamon in a large bowl.
  2. Make a well in the center and add the eggs, oil, mashed bananas, crushed pineapple (with juice), and vanilla.
  3. Mix with a spoon until well blended, avoiding using a beater.
  4. Pour the batter into a greased and floured tube pan.
  5. Bake at 350°F (175°C) for 1 hour and 20 minutes.
  6. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
