A comforting bean and bread casserole with fresh vegetables, creamy dressing, and optional bacon, perfect for casual family dinners or potluck gatherings.

Ingredients

  • leftover corn bread
  • 1 to 2 cans pinto beans
  • onion
  • green pepper
  • 3/4 cup mayonnaise or lite Miracle Whip
  • 1/2 cup dill pickle juice
  • diced tomatoes
  • crumbled bacon (optional)

Instructions

  1. Use a casserole dish of desired size.
  2. Crumble leftover corn bread over the bottom of the dish.
  3. Add 1 to 2 cans of pinto beans on top of the corn bread.
  4. Use enough bean juice to moisten the corn bread slightly.
  5. Cover with chopped onion and green pepper.
  6. Mix 3/4 cup mayonnaise and dill pickle juice to make the dressing.
  7. Pour the dressing over the salad and poke holes to let the dressing reach the corn bread.
  8. Top with diced tomatoes and crumbled bacon if desired.
