- Cook the rice and allow it to cool.
- Thoroughly mix the cooked rice, ground pork, eggs, chopped bell pepper, chopped onion, salt, and pepper.
- Form the mixture into 12 patties.
- Place the patties in a greased baking pan.
- Pour seasoned tomato juice over the patties.
- Bake in a 450°F oven for 10 minutes.
- Reduce the oven temperature to 350°F and bake for an additional 1 hour and 30 minutes until the tomato juice is absorbed.
