Ingredients

  • 3/4 cup raw rice
  • 2 1/2 pounds ground pork
  • salt
  • pepper
  • 2 eggs
  • 1 small bell pepper, chopped
  • 1 medium onion, chopped
  • 1 large can seasoned tomato juice

Instructions

  1. Cook the rice and allow it to cool.
  2. Thoroughly mix the cooked rice, ground pork, eggs, chopped bell pepper, chopped onion, salt, and pepper.
  3. Form the mixture into 12 patties.
  4. Place the patties in a greased baking pan.
  5. Pour seasoned tomato juice over the patties.
  6. Bake in a 450°F oven for 10 minutes.
  7. Reduce the oven temperature to 350°F and bake for an additional 1 hour and 30 minutes until the tomato juice is absorbed.
