Ingredients

  • 2 c. chopped vegetables (broccoli, cauliflower, carrots)
  • 1/2 c. chopped onion
  • 1/3 c. Parmesan cheese
  • 1 c. milk
  • 2 eggs
  • 1/2 c. Bisquick
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Grease a 9-inch pie pan.
  2. Sprinkle the chopped vegetables, chopped onion, and Parmesan cheese evenly in the prepared pie pan.
  3. In a separate bowl, beat together the milk, eggs, Bisquick, salt, and pepper until well combined.
  4. Pour the mixture over the vegetables in the pie pan.
  5. Bake at 400°F (200°C) for 35 minutes or until the top is golden and the filling is set.
