Ingredients

  • 1/3 cup corn oil
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups unsifted flour
  • 1 cup mincemeat
  • 1 cup chopped pecans
  • 1 cup diced fruit mix
  • 1/3 cup diced dates
  • candied cherry halves
  • candied pineapple

Instructions

  1. Beat the oil and sugar together.
  2. Beat in eggs one at a time. Add vanilla.
  3. Add baking soda, salt, and flour. Mix well.
  4. Stir in mincemeat, chopped pecans, diced fruit mix, and diced dates.
  5. Spoon batter into well-greased muffin pans using paper cups if desired, filling about 3/4 full.
  6. Press a candied pineapple, cherry half, and pecan half into the center of each.
  7. Bake in a preheated 300°F (150°C) oven for 30 minutes or until the cakes spring back when touched.
