- Beat the oil and sugar together.
- Beat in eggs one at a time. Add vanilla.
- Add baking soda, salt, and flour. Mix well.
- Stir in mincemeat, chopped pecans, diced fruit mix, and diced dates.
- Spoon batter into well-greased muffin pans using paper cups if desired, filling about 3/4 full.
- Press a candied pineapple, cherry half, and pecan half into the center of each.
- Bake in a preheated 300°F (150°C) oven for 30 minutes or until the cakes spring back when touched.
