Ingredients

  • 12 oz. uncooked bowtie pasta
  • 6 to 8 garlic cloves, diced
  • 1/4 c. olive oil
  • 2/3 c. fresh Key lime juice
  • 1/2 c. sherry
  • 2 c. sliced green onions
  • 1 lb. plum tomatoes, chopped
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 Tbsp. grated Key lime rind
  • 1/2 c. chopped fresh parsley

Instructions

  1. Cook the pasta according to package directions, drain, and keep warm.
  2. Saute garlic in olive oil in a skillet until tender.
  3. Add lime juice and sherry, cook over high heat for 5 minutes or until the mixture is reduced to 1/4 cup.
  4. Add green onions and chopped tomato, cook over medium heat, stirring occasionally, for 5 minutes.
  5. Stir in black beans, salt, pepper, and grated lime rind.
  6. Pour the mixture over the cooked pasta and toss to coat.
  7. Sprinkle with chopped fresh parsley and serve immediately.
