Ingredients

  • 7/8 cup flour
  • 1/2 cup sugar
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/3 cup margarine, melted
  • 1 1/3 cups maraschino cherries, drained and chopped
  • 1 1/4 cups flaked coconut
  • 1 can (14 oz) sweetened condensed milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine flour, sugar, cocoa powder, and salt; mix well.
  3. Add egg and melted margarine; mix until smooth.
  4. Spread the batter into a lightly greased 9-inch square baking pan.
  5. Evenly top the batter with drained and chopped maraschino cherries.
  6. In a separate bowl, combine 1 cup of flaked coconut with 3/4 cup of sweetened condensed milk.
  7. Spread this coconut mixture over the cherries in the pan.
  8. Bake for 25 to 30 minutes or until the coconut is lightly browned.
