Ingredients

  • 6 large eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup seedless raspberry jam
  • 1 cup heavy cream
  • 2 tablespoons confectioners sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a jelly roll pan and line the bottom with wax paper.
  3. Grease the wax paper and dust lightly with flour, then tap out excess flour.
  4. In a large bowl, beat eggs and sugar until thick and pale.
  5. Add vanilla and mix well.
  6. Sift cocoa powder over the mixture and gently fold in until combined.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 12-15 minutes until the cake is set and springs back when lightly pressed.
  9. Remove from oven and invert onto a clean towel dusted with powdered sugar.
  10. Carefully peel off the wax paper and roll the cake up in the towel from the short end to shape it.
  11. Let the rolled cake cool completely.
  12. Unroll the cake carefully and spread raspberry jam evenly over the surface.
  13. Whip heavy cream with confectioners sugar until stiff peaks form.
  14. Spread whipped cream over the jam layer.
  15. Re-roll the cake without the towel and place on a serving platter.
  16. Slice and serve.
