Black Forest Roll

- Preheat oven to 350°F (175°C).
- Grease a jelly roll pan and line the bottom with wax paper.
- Grease the wax paper and dust lightly with flour, then tap out excess flour.
- In a large bowl, beat eggs and sugar until thick and pale.
- Add vanilla and mix well.
- Sift cocoa powder over the mixture and gently fold in until combined.
- Pour batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes until the cake is set and springs back when lightly pressed.
- Remove from oven and invert onto a clean towel dusted with powdered sugar.
- Carefully peel off the wax paper and roll the cake up in the towel from the short end to shape it.
- Let the rolled cake cool completely.
- Unroll the cake carefully and spread raspberry jam evenly over the surface.
- Whip heavy cream with confectioners sugar until stiff peaks form.
- Spread whipped cream over the jam layer.
- Re-roll the cake without the towel and place on a serving platter.
- Slice and serve.
