Blender Pesto

Ingredients

  • 2 c. fresh basil leaves
  • 1/2 c. olive oil
  • 2 Tbsp. pine nuts
  • 2 cloves garlic
  • 1 tsp. salt
  • 1/2 c. fresh grated Parmesan cheese
  • 2 Tbsp. fresh grated Romano cheese
  • 3 Tbsp. butter

Instructions

  1. Place basil, olive oil, pine nuts, garlic, and salt in a blender.
  2. Mix at high speed, stopping to scrape sides of the blender with a rubber spatula as needed.
  3. When ingredients are evenly blended, pour into a bowl.
  4. Beat by hand the grated Parmesan and Romano cheeses.
  5. Add softened butter and mix well.
  6. Before spooning pesto over pasta, add 1 tablespoon water from the cooked pasta to the pesto.
