Ingredients

  • 1 tsp vegetable oil
  • 1 cup chopped onions
  • 1/2 cup chopped celery
  • 2 tsp minced garlic
  • 2 cups cooked white beans
  • 1 cup diced butternut squash
  • 1 cup chopped carrots
  • 1 can (13 3/4 or 14 1/2 oz.) chicken broth
  • 1 cup water
  • 1 strip lemon peel (2-inch)
  • 1/4 tsp thyme
  • 4 cups shredded cabbage
  • 1 can (14 or 16 oz.) reduced-sodium tomatoes
  • 1 tsp lemon juice
  • 1/2 cup julienned basil

Instructions

  1. Heat oil in a saucepan over medium heat.
  2. Add chopped onions and celery; cover and cook, stirring until tender, about 5 minutes.
  3. Stir in minced garlic; cook for 30 seconds.
  4. Add cooked white beans, diced butternut squash, chopped carrots, chicken broth, water, lemon peel, thyme, and chopped tomatoes.
  5. Bring to a boil; reduce heat and simmer uncovered until vegetables are tender, about 20 minutes.
  6. Remove lemon peel and discard before serving.
  7. Stir in lemon juice and julienned basil before serving.
