Ingredients

  • 1 (9-inch) baked pie crust
  • 1 cup sugar
  • 1/3 cup flour
  • 1/8 teaspoon cinnamon
  • 2 tablespoons butter or margarine
  • 1 tablespoon lemon juice
  • 4 cups fresh berries
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla

Instructions

  1. Bake the pie crust until golden and let cool completely.
  2. Combine sugar, flour, and cinnamon in a medium saucepan.
  3. Mix well to blend the dry ingredients.
  4. Stir in butter, lemon juice, and 2 cups of blueberries.
  5. Heat over medium heat to boiling, stirring frequently to mash a few berries.
  6. Boil for 1 to 2 minutes until margarine melts and sugar dissolves.
  7. Remove from heat and cool completely.
  8. Fold in remaining 2 cups of blueberries.
  9. Pour the blueberry mixture into the baked pie crust.
