Ingredients

  • 3 lb yellow squash, trimmed and thinly sliced
  • 4 Tbsp butter, melted
  • 3/4 cup bread crumbs
  • 1/2 cup finely chopped scallions
  • 2 eggs, lightly beaten
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp sugar
  • 1 to 1 1/2 cups Cheddar cheese, grated

Instructions

  1. Heat oven to 375°F (190°C).
  2. Blanch the sliced yellow squash in a large pot of salted water for 5 minutes.
  3. Drain the squash and place it in a buttered 2-quart casserole dish.
  4. Combine bread crumbs and melted butter, reserving 1/3 cup of this mixture.
  5. Mix the remaining crumb mixture with scallions, eggs, salt, pepper, sugar, and grated cheese.
  6. Stir this mixture into the squash slices.
  7. Sprinkle the reserved bread crumb mixture over the top.
  8. Bake for 1 to 1 1/4 hours or until golden brown and a knife inserted into the center comes out clean.
