Baked Yellow Squash Casserole

- Heat oven to 375°F (190°C).
- Blanch the sliced yellow squash in a large pot of salted water for 5 minutes.
- Drain the squash and place it in a buttered 2-quart casserole dish.
- Combine bread crumbs and melted butter, reserving 1/3 cup of this mixture.
- Mix the remaining crumb mixture with scallions, eggs, salt, pepper, sugar, and grated cheese.
- Stir this mixture into the squash slices.
- Sprinkle the reserved bread crumb mixture over the top.
- Bake for 1 to 1 1/4 hours or until golden brown and a knife inserted into the center comes out clean.
