Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup plus 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 1 cup milk
  • 1/4 cup butter or margarine, melted
  • 1 large egg

Instructions

  1. Preheat oven to 425°F.
  2. Grease a 13 x 9-inch baking pan.
  3. In a medium bowl, stir together flour, 1/2 cup sugar, baking powder, and salt.
  4. Add blueberries and toss to coat.
  5. In another medium bowl, whisk together milk, melted butter, egg, and lemon peel.
  6. Stir the wet ingredients into the dry ingredients until just combined.
  7. Spread the batter evenly in the prepared pan.
  8. Sprinkle with the remaining 1 tablespoon of sugar.
  9. Bake for 20 minutes.
  10. Allow to cool slightly before cutting into squares.
