Onion Blossoms

Instructions
- Peel the onion, leaving the root intact.
- Cut the onion vertically into quarters, leaving about 1/2 inch of the root uncut.
- Cut each quarter into thirds.
- Place the onion in boiling water for 1 minute, then transfer it to ice water for 5 minutes.
- Loosen the petals of the onion. Drain the onion, placing it cut side down.
- Place the flour in a zip-top bag.
- Add the onion to the bag and shake to coat with flour.
- Dip the onion in the beaten egg.
- Place the cracker crumbs in the bag.
- Add the onion back into the bag and toss to coat with crumbs.
- Chill the coated onion for 1 hour.
- Pour vegetable oil to a depth of 3 inches in a deep fryer or saucepan and heat to 375°F (190°C).
- Fry the onion for 5 to 7 minutes or until golden brown.
- Drain the onion on paper towels.
- Sprinkle with optional salt.
- Serve with dark honey mustard or Ranch dressing.
