Ingredients

  • 1 c. sugar
  • 1/4 c. butter, softened
  • 1 egg
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 3/4 to 1 c. blueberries

Instructions

  1. Cream sugar and butter with an electric mixer at low speed.
  2. Add egg, baking powder, salt, cinnamon, nutmeg, vanilla, and 2/3 cup of flour. Blend well.
  3. Add remaining 2/3 cup flour and stir just until moistened.
  4. Fold in blueberries.
  5. Fill paper-lined muffin cups 3/4 full.
  6. Bake at 375° for 20 to 30 minutes.
