Ingredients

  • 3 cups sifted flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 stick butter, melted
  • 1 tablespoon grated orange zest
  • 2/3 cup orange juice
  • 1 cup blueberries
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, orange juice, melted butter, and grated orange zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until the dry ingredients are moistened.
  5. Fold in the blueberries and chopped walnuts gently.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60 to 70 minutes until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  9. Wrap in foil and store overnight before slicing and serving.
