Ingredients

  • 2 c. blueberries
  • juice of 1/2 lemon
  • 1/2 tsp. cinnamon
  • 3/4 c. sugar
  • 3 Tbsp. butter
  • 1/2 c. milk
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1 Tbsp. cornstarch

Instructions

  1. Line a well-greased 8-inch pan, about 2 inches deep, with blueberries, lemon juice, and cinnamon.
  2. Cream the butter and 3/4 cup sugar; add the milk and mix well.
  3. Sift together the flour, baking powder, and salt, then add to the wet mixture and stir until combined.
  4. Spread the batter evenly over the blueberries in the prepared pan.
  5. In a separate bowl, mix 1 cup sugar, a dash of salt, and cornstarch; sprinkle this mixture evenly over the batter.
  6. Pour boiling water over the top without stirring.
  7. Bake at 375°F (190°C) for 1 hour or until the topping is golden and the filling is bubbly.
  8. Serve hot with whipped cream or vanilla ice cream.
