Ingredients

  • 1/4 cup shortening
  • 1/3 cup sugar
  • 2 eggs
  • 2 cups flour
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup blueberries

Instructions

  1. Cream shortening and sugar together until light and fluffy.
  2. Add beaten eggs and mix well.
  3. Sift 1 1/2 cups of flour, baking powder, and salt together.
  4. Sprinkle blueberries with the remaining 1/2 cup of flour to coat.
  5. Gently fold the blueberries into the batter.
  6. Spoon the batter into greased muffin tins.
  7. Bake at 400°F (200°C) for 25 to 30 minutes, or until golden brown.
