Ingredients

  • 1 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 small can crushed pineapple, drained
  • Pineapple juice (reserved from can)
  • 1 teaspoon vanilla or lemon flavoring
  • 3 cups sifted flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg

Instructions

  1. Cream shortening and sugar; add eggs one at a time and mix until smooth.
  2. Sift flour with soda, salt, and nutmeg, then gradually add to the creamed mixture.
  3. If batter is too thick, add some of the pineapple juice.
  4. Add crushed pineapple before using up all of the flour; this will keep the batter from becoming too thin.
  5. Drop by spoonfuls onto a baking sheet and bake for 8 to 12 minutes at 350° to 375° or until lightly browned.
  6. Cool the cookies and frost with a glaze, then sprinkle with chopped nuts if desired.
