Ingredients

  • 2 cups sugar
  • 1/2 cup brown sugar
  • 1 cup Crisco
  • 1 cup milk
  • 1 teaspoon vanilla
  • 4 eggs
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 cup coconut
  • 1 cup pecans

Instructions

  1. Beat sugar, brown sugar, and Crisco together until well combined.
  2. Add eggs one at a time, beating well after each addition.
  3. Add vanilla and milk, mixing thoroughly.
  4. Gradually mix in flour, baking powder, and a pinch of salt until smooth.
  5. Fold in coconut and pecans gently.
  6. Pour batter into a greased baking pan.
  7. Bake at 325°F (163°C) for 1 hour or until a toothpick inserted into the center comes out clean.
