  • 4 1/2 to 5 cups enriched flour
  • 2 packages dry yeast
  • 1/2 cup milk

Instructions

  1. Stir together 2 cups flour and yeast in a large bowl.

  5. Stir in eggs, grated lemon rind, and golden raisins.
  6. Add enough remaining flour (about 2 to 2 1/2 cups) to make a moderately stiff dough.
  7. Turn onto a lightly floured surface and knead until smooth and satiny, about 8 to 10 minutes.
  8. Shape into a ball and place in a lightly greased bowl, turning to grease all sides.
  9. Cover and let rise in a warm place (80-85°F) until doubled in size, about 2 hours.
  10. Punch down the dough and let rest for 10 minutes.
  11. Divide the dough into 5 equal parts.
  12. Roll each part into a 20-inch long rope.
  13. Braid 3 ropes together and place on a greased baking sheet.
  14. Twist the remaining 2 ropes together and place over the braid.
  15. Let rise in a warm place until doubled, about 45 minutes.
  16. Bake in a preheated 350°F oven for 35-40 minutes, or until done.
  17. Cover with aluminum foil if necessary to prevent excessive browning.
  18. Optional: brush with milk and sprinkle with coarse salt or caraway seed before baking, or frost with powdered sugar glaze after baking, or brush with butter after baking for plain version.
