Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 teaspoon pepper
  • 1 boneless beef chuck pot roast (2 to 3 pounds)
  • 2 tablespoons cooking oil
  • 1 cup water
  • 1 (14 1/2 oz.) can chopped tomatoes with liquid
  • 1 teaspoon caraway seed
  • 1 envelope dry onion soup mix
  • 2 bay leaves

Instructions

  1. Combine flour and pepper; dredge the pot roast in the mixture.
  2. In a Dutch oven, heat the cooking oil and brown the roast on all sides.
  3. Remove the browned roast and drain excess fat if necessary.
  4. Add water, chopped tomatoes with liquid, caraway seed, dry onion soup mix, and bay leaves to the Dutch oven.
  5. Bring the mixture to a boil.
  6. Reduce heat to low, cover tightly, and simmer for 2 to 3 hours or until the roast is tender.
  7. Remove the roast from the Dutch oven and place on a warm platter.
  8. Discard the bay leaves before serving.
