  • 2 qt. water
  • 1/2 tsp. salt
  • 3 Tbsp. melted butter
  • finely chopped parsley

Instructions

  1. Remove cauliflower's large outer leaves.
  2. Cut the stalk off to about 1 inch and cut a deep cross on the end to help it cook quicker.
  3. Bring water and salt to a boil.
  4. Put cauliflower in, head up, and boil for 3 minutes.
  5. Remove cauliflower from boiling water and pour cold water over it to cool it, keeping it white.
  6. Place cauliflower back into the boiling water, head down, and boil for about 20 minutes, being careful not to overcook.
  7. Serve cauliflower on a platter with melted butter poured over it and sprinkled with parsley.
  8. Save water and any leftovers for cauliflower soup.
