Ingredients

  • 1 c. cooked rice
  • 1 Tbsp. minced onion
  • 1/2 Tbsp. cider vinegar
  • 1 Tbsp. salad oil
  • 1/2 tsp. curry powder
  • 4 c. cubed cooked chicken
  • 2/3 c. chopped celery
  • 1 can mandarin oranges, drained
  • 1 can chunk pineapple, drained
  • 1/2 c. almonds or walnuts
  • 2/3 c. mayonnaise
  • 2 Tbsp. French dressing
  • salt and pepper to taste

Instructions

  1. Combine cooked rice, minced onion, cider vinegar, salad oil, and curry powder in a bowl and chill.
  2. Add cooked chicken, chopped celery, drained mandarin oranges, drained pineapple, almonds or walnuts, mayonnaise, and French dressing to the chilled mixture.
  3. Mix lightly to combine all ingredients thoroughly and serve.
