Ingredients

  • 1 qt canned tomatoes
  • 1 medium head cabbage shredded (about 3 qt)
  • 1 large onion minced
  • 2 carrots cubed
  • 10 medium potatoes cubed
  • 3/4 lb butter
  • 1 large green pepper minced
  • 1 medium beet
  • 4 qt water
  • 1 Tbsp salt
  • 1/2 pt whipping cream

Instructions

  1. Divide 3/4 pound butter into three pieces.
  2. Put one piece of butter and canned tomatoes in a pan.
  3. Heat and then simmer the tomatoes.
  4. Fry in a frying pan one piece of butter, minced onion, shredded cabbage, and cubed carrot until golden brown.
  5. Put water in a 6-quart pot and bring to a boil.
  6. Add 6 cups of cubed potatoes, the beet, and salt to the boiling water.
  7. When the potatoes are done, remove them and add the cooked tomatoes.
  8. Bring the mixture to a boil again.
  9. Mash the potatoes with the remaining butter and half of the whipping cream.
  10. Add the mashed potatoes and remaining cream to the pot.
  11. Boil for 1 minute.
  12. Add the cooked onions, cabbage, remaining raw cabbage, and potatoes to the pot.
  13. Bring the mixture to a boil.
  14. Remove from heat and discard the beet.
  15. Serve the soup garnished with minced green pepper or dill leaves.
