Ingredients

  • 1 large can whole tomatoes
  • 2 medium cans sliced beets
  • 6 medium red potatoes
  • 1 head of red cabbage
  • 1 large onion
  • 1 Tbsp. minced garlic
  • 3-4 bay leaves
  • salt
  • pepper
  • 1 tsp. cumin (optional)
  • dash of hot red pepper flakes (optional)

Instructions

  1. Pour the cans of tomatoes and beets (including the juices) into a large soup pot.
  2. Add the diced potatoes and shredded cabbage to the pot.
  3. Cover with water, ensuring at least 1 inch of water above the vegetables.
  4. Add the minced garlic, salt, pepper, bay leaves, cumin (if using), and hot red pepper flakes (if desired).
  5. Bring to a fast boil, then lower the heat to a low boil.
  6. Cook until the vegetables are just tender, about 45-60 minutes.
  7. Serve hot with a dollop of sour cream.
