Ingredients

  • 2 cups red beans
  • 2 cloves garlic
  • 1/3 cup red pepper (diced)
  • 1/3 cup yellow peppers (diced)
  • 1 yellow onion (chopped)
  • 1/2 lb smoked ham
  • 2 tbsp Worcestershire sauce
  • Louisiana hot sauce
  • Salt
  • Pepper
  • Olive oil
  • Rice

Instructions

  1. Soak red beans overnight. Drain water and place beans in a crock pot. Add fresh water until beans are covered.
  2. Saute chopped onions, minced garlic, diced red peppers, and yellow peppers in olive oil until tender.
  3. Add the sautéed vegetables to the crock pot with the soaked beans.
  4. Add Worcestershire sauce and diced smoked ham to the crock pot.
  5. Slow cook the mixture for 2 hours.
  6. Add hot sauce, salt, and pepper to taste.
  7. Continue slow cooking until beans reach desired consistency.
