Ingredients

  • 2 (29 oz.) cans sweet potatoes
  • 3/4 c. brown sugar
  • 1/2 c. butter
  • 1/4 to 1/3 c. bourbon
  • 1/2 tsp. vanilla extract
  • 2 c. miniature marshmallows

Instructions

  1. Combine sweet potatoes, brown sugar, melted butter, bourbon, and vanilla extract, mixing well.
  2. Spoon mixture into a lightly greased 1 1/2-quart casserole.
  3. Cover and refrigerate for 8 hours or overnight.
  4. Remove from refrigerator; let stand for 30 minutes.
  5. Bake, uncovered, at 350°F for 25 minutes.
  6. Remove from oven; top with marshmallows.
  7. Bake an additional 7 minutes or until marshmallows are golden.
