Ingredients

  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 3/4 cup sugar
  • 1 egg
  • 1 1/3 cups milk
  • 6 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boysenberries
  • 3 tablespoons brown sugar

Instructions

  1. Preheat oven to 400°F.
  2. Grease 12 muffin tins.
  3. In a medium bowl, sift together flour and baking powder.
  4. Stir in sugar.
  5. In another bowl, beat together egg, milk, vegetable oil, and vanilla extract.
  6. Add the wet ingredients to the dry ingredients all at once.
  7. Stir just until blended.
  8. Gently fold in boysenberries.
  9. Spoon batter into the prepared muffin tins.
  10. Sprinkle the tops with brown sugar.
  11. Bake for 15 to 20 minutes, until muffins are well risen and golden brown.
