Ingredients

  • 2 cups rolled bran
  • 1 1/4 cups skim milk
  • 1 cup flour
  • 1/3 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup melted margarine
  • 1/4 cup Egg Beaters or 1 egg
  • 1/2 cup raisins
  • 1/2 cup chopped apple

Instructions

  1. Mix bran and milk together and set aside.
  2. In a separate bowl, blend flour, brown sugar, baking powder, and baking soda.
  3. Combine melted margarine and Egg Beaters (or egg) and stir into the bran-milk mixture.
  4. Stir in raisins and chopped apple.
  5. Divide the batter into two greased pans or muffin tins.
  6. Bake at 350°F for approximately 20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool the cake and optionally top with powdered sugar or cream cheese.
