Ingredients

  • 6 cups bran cereal
  • 1 teaspoon salt
  • 2 cups hot tap water
  • 1 quart buttermilk
  • 3 cups sugar
  • 1 cup oil
  • 4 eggs
  • 5 cups flour
  • 5 teaspoons baking soda

Instructions

  1. Mix the bran cereal with hot tap water and let sit until softened.
  2. Add buttermilk, sugar, oil, eggs, salt, and baking soda to the bran mixture and stir well.
  3. Gradually add flour, mixing until just combined.
  4. Pour batter into a greased or lined muffin tin.
  5. Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow muffins to cool slightly before serving.
