Ingredients

  • 3 cups pecans
  • 1 1/2 cups halved maraschino cherries
  • 1 1/2 cups golden raisins
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 eggs
  • 1/2 cup plus 2 tablespoons brandy

Instructions

  1. Combine pecans, halved maraschino cherries, and golden raisins in a large bowl; set aside.
  2. In a separate bowl, mix flour, sugar, salt, and baking powder.
  3. Add the dry mixture to the fruit and nut mixture; toss until well coated.
  4. Beat eggs until frothy, then add 2 tablespoons of brandy.
  5. Pour the egg mixture over the fruit and flour mixture; mix well to combine.
  6. Pour the batter into a greased and floured loaf pan.
  7. Bake at 300°F (150°C) for 1 hour and 45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan.
  9. Wrap the cake in a brandy-soaked cloth, then wrap again in foil.
  10. Let stand for 2 days, adding remaining brandy to the cloth as needed to maintain moisture.
