Brandy Nut Cake

- Combine pecans, halved maraschino cherries, and golden raisins in a large bowl; set aside.
- In a separate bowl, mix flour, sugar, salt, and baking powder.
- Add the dry mixture to the fruit and nut mixture; toss until well coated.
- Beat eggs until frothy, then add 2 tablespoons of brandy.
- Pour the egg mixture over the fruit and flour mixture; mix well to combine.
- Pour the batter into a greased and floured loaf pan.
- Bake at 300°F (150°C) for 1 hour and 45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan.
- Wrap the cake in a brandy-soaked cloth, then wrap again in foil.
- Let stand for 2 days, adding remaining brandy to the cloth as needed to maintain moisture.
