Ingredients

  • 2 to 2.5 lb. round steak

  • 8 oz. Prosciutto or ham, diced
  • 1/2 Tbsp. oregano
  • 1/2 Tbsp. basil
  • 2 Tbsp. virgin olive oil
  • 3 to 5 cloves garlic
  • 1/2 cup dry red wine
  • 60 to 64 oz. Italian red sauce

Instructions

  1. Strip sausage from links, brown and drain.
  2. In a large bowl, mix sausage with eggs, cheeses, and ham. Add oregano and basil.
  3. Heat red sauce on low.
  4. Trim most of the fat from the steak; with a meat mallet, pound meat to 1/4-inch thickness.
  5. Sprinkle and pat pepper and garlic on the meat.
  6. Spread the cheese and meat mixture evenly over the steak, then roll up tightly (jelly roll style).
  7. Secure the roll with household string on sides and lengthwise.
  8. Brown all sides of the meat roll in olive oil.
  9. Transfer the meat roll to the red sauce and bring to a light boil, then simmer for 2 1/2 to 3 hours, turning occasionally.
  10. Add wine about the last hour of cooking.
  11. Cook pasta al dente separately.
  12. Serve each portion topped with a slice of the meat roll and sauce, garnished with grated Parmesan or Romano cheese.
