- In a large nonstick skillet, heat olive oil over medium-high heat until it shimmers.
- Fry cubed potatoes in a single layer until browned and partially cooked through, about 10 minutes.
- Turn potatoes once or twice with a spatula, but don't stir too often to allow browning.
- Pulse diced tomatoes, sliced garlic, ground cumin, sugar, crushed red pepper flakes, and dashes of Tabasco in a food processor just to break up the tomatoes (do not puree).
- Add the tomato mixture to the skillet with the potatoes and stir to coat.
- Finish with a drizzle of lemon juice before serving.
