Bravo Potatoes are flavorful, crispy cubed potatoes simmered in a spicy tomato garlic sauce, perfect for a hearty, zesty side dish or casual meal.

Ingredients

  • 2 Tbsp. olive oil
  • 1 1/2 lb. Russet potatoes, peeled and cut into 1/2-inch cubes
  • 1 (14 oz.) can diced tomatoes, drained
  • 4 to 5 cloves garlic, sliced
  • 1/2 tsp. ground cumin
  • 1/2 tsp. sugar
  • 1/2 tsp. crushed red pepper flakes
  • 10 dashes Tabasco
  • salt to taste
  • drizzle of lemon juice

Instructions

  1. In a large nonstick skillet, heat olive oil over medium-high heat until it shimmers.
  2. Fry cubed potatoes in a single layer until browned and partially cooked through, about 10 minutes.
  3. Turn potatoes once or twice with a spatula, but don't stir too often to allow browning.
  4. Pulse diced tomatoes, sliced garlic, ground cumin, sugar, crushed red pepper flakes, and dashes of Tabasco in a food processor just to break up the tomatoes (do not puree).
  5. Add the tomato mixture to the skillet with the potatoes and stir to coat.
  6. Finish with a drizzle of lemon juice before serving.
