Bread Puff Pudding

Ingredients

  • 2 c. milk
  • 3/4 c. soft bread crumbs
  • 1 Tbsp. butter
  • 2 eggs
  • 1/2 c. sugar
  • 1/8 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. vanilla

Instructions

  1. Scald the milk and pour over the bread crumbs and butter.
  2. Separate the eggs; beat the yolks until thick and combine with the sugar, baking soda, salt, and vanilla.
  3. Add the bread crumbs to the egg mixture.
  4. Fold in the whipped egg whites until well combined.
  5. Transfer the mixture to a well oiled pudding pan.
  6. Set the pudding pan in a larger pan of warm water.
  7. Bake in a slow oven for 30 minutes or until a knife inserted comes out clean.
  8. Serve warm.
