Ingredients

  • 1 1/2 cups crisp oatmeal cookies, finely crushed
  • 1 tablespoon instant coffee
  • 1 cup sugar
  • 4 squares semi-sweet chocolate, melted
  • 3 eggs
  • 1/4 cup butter, melted
  • 1/4 cup rum
  • 3 (8 oz.) packages cream cheese, softened
  • 2 tablespoons flour
  • 1 teaspoon vanilla

Instructions

  1. Toss together the crushed oatmeal cookies and melted butter.
  2. Press the mixture into the bottom of a 9-inch spring-form pan to form the crust.
  3. Stir together the rum and instant coffee until well combined.
  4. In a mixing bowl, beat the softened cream cheese, sugar, melted chocolate, flour, and vanilla until just combined.
  5. Add the eggs all at once to the mixture and mix well, being careful not to overbeat.
  6. Stir in the rum and coffee mixture.
  7. Pour the filling onto the prepared crust in the spring-form pan.
  8. Bake at 350°F (175°C) for 50 to 60 minutes, until set.
  9. Cool the cheesecake for 10 minutes before removing from the pan.
