Ingredients

  • 6 veal or shoulder chops, 3/4-inch thick
  • salt
  • pepper
  • flour
  • 1 egg, beaten
  • 2 cups bread crumbs
  • 3 to 4 pounds butter

Instructions

  1. Pound the veal or shoulder chops well to an even thickness.
  2. Season the chops with salt and pepper to taste.
  3. Dust the chops with flour.
  4. Dip the chops into the beaten egg.
  5. Coat the chops with bread crumbs.
  6. Fry the breaded chops in hot butter, turning when they are browned on each side.
  7. Once cooked, place the chops in the oven to stay warm until serving.
