Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup milk
  • 1 egg, beaten
  • 1 1/2 cups ground cooked turkey
  • 1 cup seasoned mashed potatoes
  • 2 tablespoons grated onion
  • 2 tablespoons minced pimento
  • 1/2 teaspoon salt
  • pepper

Instructions

  1. Melt butter in a saucepan; blend in flour and gradually add milk, cooking and stirring constantly until thickened.
  2. Add a little hot mixture to the beaten egg and mix well.
  3. Stir the egg mixture into the hot sauce and cook, stirring constantly for one minute.
  4. Add ground cooked turkey, seasoned mashed potatoes, grated onion, minced pimento, salt, and pepper; mix lightly.
  5. Chill the mixture thoroughly.
  6. Shape into croquettes and arrange in a greased shallow baking dish.
  7. Bake at 350°F for 25 to 30 minutes or until lightly browned.
