Ingredients

  • 4 English muffins
  • 1 lb. Bob Evans sausage
  • 8 eggs
  • 1/3 cup sour cream
  • 1 lb. sharp Cheddar cheese
  • 1 small can diced green chilies

Instructions

  1. In a 9 x 13-inch pan, cook the sausage and drain excess fat.
  2. Spoon the cooked sausage over the split and buttered English muffins in the pan.
  3. In a bowl, beat the eggs and add sour cream.
  4. Pour the egg mixture over the sausage and muffins.
  5. Sprinkle grated Cheddar cheese over the top.
  6. Dot with diced green chilies.
  7. Cover and refrigerate overnight.
  8. In the morning, bake in a 325°F oven for 1 hour.
