Ingredients

  • 1 lb. sausage
  • 1 clove garlic, crushed
  • 4 cups sliced summer squash
  • 1/2 cup dry bread crumbs
  • 1/2 cup Parmesan cheese
  • 1/2 cup milk
  • 1 tablespoon snipped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano

Instructions

  1. Cook sausage and crushed garlic until the meat is browned; drain off excess fat.
  2. Cook sliced summer squash, covered, in a small amount of water until tender; drain.
  3. In a mixing bowl, stir together cooked squash, bread crumbs, Parmesan cheese, milk, parsley, salt, and oregano.
  4. Fold in beaten eggs into the mixture.
  5. Transfer the mixture to a 10 x 6 x 1½-inch baking dish.
  6. Bake at 325°F (163°C) for 25 to 30 minutes until golden and bubbly.
