Ingredients

  • 1/2 loaf day old bread
  • 2 eggs
  • 1 cup low-fat milk
  • 2 large ripe tomatoes
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon freshly ground pepper

Instructions

  1. Cut the bread into thick slices and arrange on a 7 x 10 inch ovenproof glass baking pan.
  2. Preheat the oven to 350°F (175°C).
  3. In a bowl, whisk together the eggs and milk, then season with freshly ground pepper.
  4. Arrange tomato slices over the bread.
  5. Pour the egg and milk mixture over the bread and tomatoes.
  6. Sprinkle chopped fresh cilantro over the top, then add grated Parmesan cheese.
  7. Bake for 15 minutes or until the custard sets.
  8. Cut into squares and serve.
