- Thaw the puff pastry for 20 minutes.
- On a floured surface, roll the pastry to a 15-inch circle.
- Preheat the oven to 400°F (200°C).
- Slice the Brie cheese in half horizontally.
- Layer the sliced Brie with toasted almonds and chopped parsley.
- Reassemble the Brie and place it in the center of the pastry.
- Brush the pastry edges with the beaten egg wash.
- Pull up the sides of the pastry to enclose the Brie, sealing the edges.
- Place the sealed pastry seam side down on an ungreased baking sheet.
- If desired, decorate the top with pastry scraps.
- Brush the top with egg wash.
- Bake in the preheated oven for 20 minutes until golden brown.
- Let stand for 10 minutes before serving.
