Ingredients

  • 3 to 4 lb beef brisket
  • 1/2 envelope onion soup mix
  • pepper
  • 1/2 cup dry red wine
  • 8 carrots
  • 4 potatoes

Instructions

  1. Trim excess fat from the brisket.
  2. Place the meat on a large sheet of heavy foil in a shallow roasting pan.
  3. Sprinkle the brisket with onion soup mix and pepper.
  4. Pour the red wine around the meat.
  5. Peel the carrots and potatoes; cut them into halves or serving size pieces and arrange around the meat.
  6. Wrap the foil to form an airtight package, allowing space for gravy to form.
  7. Bake in a preheated 325°F oven for 3 to 4 hours.
  8. Slice the meat across the grain before serving.
  9. Serve with the pan juices and vegetables.
